Chopped Salad Recipe

I look forward all year for this favorite summer go-to. Chopping up the mixed greens and other veggies of your choice not only makes it easier to eat and digest, it blends the delicious flavors making this one of the most delicious and nutrient dense summer meals you can make!

Choose your favorite veggies and add as many to your heart’s content (make sure to use organic when possible!)

Ingredients:

Mixed greens, spinach, butter lettuce.

Tomatoes, sweet peppers, finely chopped cucumber, shredded carrots or raw beets or chopped cooked beets, roasted sweet potatoes or Brussel sprouts.

I love adding daiya vegan cheese, or my recent fave: Violife vegan feta cheese

Give a nutrient and flavor boost with: kelp flakes, sea weed, nutritional yeast, fresh cilantro or parsley, other herbs and spices.

For a flavor and a dose of healthy probiotics: add a serving of sauerkraut or put a dollop of plain vegan yogurt like lite hill or Forager cashew yogurt.

Add a texture crunch with kelp noodles or sprouts

For protein add roasted almonds, walnuts or hemp seeds, garbanzo, black beans, or lentils, chopped chicken, salmon, turkey, or chicken sausage.

Chop everything well, mix, and top with dressing.
