Simple grain-free, naturally low sugar chocolate chip cookie recipes.
This is one of my go-to cookie recipes. The almond flour allows a minimal amount of maple syrup to be used and still taste great – and feel good about it! I love the crunch of the cacao nibs in place of chocolate chips. You can increase the sweetener in this–in fact I’ve seen similar recipes call for ½ cup of maple syrup. If you do use the sweeter option, I suggest increasing the oil to ½ cup.
2 cups almond flour
¼ tsp baking soda
¼ tsp. sea salt
¼ c. coconut oil or palm shortening
1 T. vanilla extract
2 Tablespoons maple syrup
½ cup chocolate chips OR ¼ cup cacao nibs
- Mix together dry ingredients, then add and mix wet ingredients, mix in cacao nibs/chocolate chips at the end.
- Scoop 1 tablespoon sized dough balls onto parchment paper-lined cookie sheet and press down gently
- Cook 7-10 minutes at 350 until just starting to brown.
- DO NOT TOUCH. Allow to cool for 15 minutes on the pan, or they will crumble.
