Chickpea Flour Pancakes
I love these chickpea flour pancakes for a grain-free vegan option.
Chickpea flour
Unsweetened vanilla almond milk
Baking soda or baking powder
Unrefined sugar
I find that much chickpea a little difficult to digest, so in place of chickpea flour I use 1/2 cup chickpea + 3/4c tapioca). To have quick pancakes all week I like to fix a double batch combining just the dry ingredients, then add the almond milk just before cooking for quick, delicious, fluffy pancakes.
