Grain-free, vegan Apple Crisp

I had a lot of fun making this paleo apple crisp last weekend. Super simple, I based it on my mom’s simple recipe and used almond/coconut flour, coconut sugar, cinnamon, and of course coconut bliss ice cream I used the muffin pan for single serving portions, and shorter cook time (because yum! Who can wait for that?!

  • 3 apples peeled and sliced (I used the applet corer and mandolin)

  • 1/2 c almond flour

  • 1T. Coconut flour

  • 2 heaping tsp. Cinnamon

  • 1/3 c coconut sugar

  • Appx. 2-3 tablespoons Coconut oil

Pile the apple pieces in the muffin cups or a pan and sprinkle mixed dry ingredients on top generously. Use 1/4 tsp to place small dabs of coconut oil on top of the powder-covered apple pieces. Bake at 350 for 1/2 hour for muffin tins and about 1 hour for a glass pan.

Serve warm with vanilla ice cream.
