Camping, BBQ and Road Trip Food
I love camping and road-tripping, but when you’re strictly grain-free, dairy-free, and egg-free what do you eat? I thought I would share my menus from a recent camping trip.
Breakfast
Forager cashew yogurt with fruit.
We had a camp stove so also made grain-free pancakes, eggs for those who eat them, and turkey bacon.
Lunch
Coconut wraps (I GET THESE FROM THE CO-op. They’re a little spendy but SO delicious)
Ideas for inside the wraps: BLTs using the leftover bacon from breakfast, organic cold cuts, Daiya cheese, honey mustard lettuce from the salad; almond butter and jelly)
Dinner
Grilled stuff—this isn’t hard to do grain-free.
For your veggies - Chop, season, and coat in oil potatoes or sweet potatoes and wrap in tinfoil to cook on the grill.
I also love a chopped salad with mixed greens, sweet peppers, tomatoes, cucumber, and shredded Daiya cheese on top. Grab Amy’s salad dressing or make your own!
